Ingredients:
1 kg mealy potatoes
1 whole egg
300 g of 00 flour
salt to taste
Preparation
Wash and boil the potatoes in water; peel and sift them. Next mix them with the flour to which egg and salt had already been added. Work the mixture to make it soft, if necessary spraying the work surface with a little flour. Shape some small pasta loafs, one or two centimetres high, cut them into several pieces with a length of about 3 cm, and then make them slip downward on the grater, pressing lightly. Pour them into boiling salted water, and 'fish' them as soon as they surface. Add seasoning of your choice.
