Risotto col tastasal



In the typical Veneto cuisine, in particular among the typical Veronese dishes, risotto al tastasal is a typical richly traditional first course. You will need the following ingredients to prepare the Veronese recipe of risotto al tastasal.



Ingredients:

400 g of Violone nano (dwarf) rice
350 g of tastasàl
1 clove of garlic
1 g of butter
Onion
Parmesan cheese
nutmeg to taste
meat broth to taste

Preparation

Tastasal is a mixture of ground pork, salted and seasoned with salt and large crushed black peppercorns (the same used for making salami). To prepare, pour the rice in a pot containing boiling broth. Mix slowly and as the broth is consumed, add a little at a time. In the meantime, prepare the tastal Ragu in a small frying pan, allowing it to cook with butter, onion cut into thin strips and one garlic clove. Add the ragu to the rice at 3/4 of cooking, amalgamating it perfectly. Sprinkle with parmesan cheese and, sprinkle with nutmeg to taste.
