Bruscansi coi ovi duri (Veneto dialect)



In typical Veneto cookery, especially as regards the typical Veronese dishes, the "bruscànsi coi ovi duri" are a particularly tasty dish. You will need the following ingredients to prepare the bruscànsi coi ovi duri:



Ingredients for 4 people:

1.6 kg of bruscànsi (butcher's broom shoots)
8 eggs
Extra virgin olive oil from the Lake Garda area
Salt and pepper
Vinegar
Grate parmesan cheese

Preparation

Clean the bruscànsi, removing the hard end part (i.e. near the roots). Wash them in plenty of water, drain them and tie them into four bunches. Make them boil in salted water, keeping them upright in the pot and allowing the ends to come out of the water. Therefore, use a high narrow pot. Boil the eggs separately for about 9 minutes. When the bruscànsi are cooked, (15-20 minutes), remove them from the water, cut the string that tied the bunches and place them in the plates. Dress them with oil, salt, pepper and Parmesan cheese, and serve them with skinned tomatoes cut in halves and, in turn, dressed with oil, pepper, salt and vinegar.
